Mexican Shredded Chicken Recipe for Tacos

  This shredded chicken is FANTASTIC for all Mexican dishes that need shredded chicken, not just tacos. Try it in enchiladas, burritos and quesadillas. You can easily prep large batches of this chicken and freeze in smaller portions for future use. I recommend using a 50/50 mix of chicken breast and chicken thighs for a better flavor. Be sure to add the 4-C's to your tacos.

Mexican Shredded Chicken Recipe for Tacos

White and Dark Meat Chicken
The 4-C's
A Touch of Lime Juice
Salt

  1. Cook the chicken by desired method.
  2. Shred the chicken. I prefer the shred the chicken in a mixer or with an electric hand mixer.
  3. Add the 4-C's, salt and lime juice while it is mixing.
  4. Do not over mix if using a mixer otherwise they may shred too finely.
